Broccoli & Gorgonzola Cheese Soup

Ingredients

  • 2 teaspoons olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 2 cloves garlic, minced
  • 1 carrot, peeled and chopped
  • 2 cups steamed broccoli
  • 3 cups reduced-sodium vegetable or chicken broth
  • 1 (12-ounce) can evaporated milk
  • 1 cup Treasure Cave® Gorgonzola Cheese
  • Salt and freshly ground black pepper

Directions

  1. In a large stock pot, heat olive oil over medium heat.
  2. Add onion, celery, garlic, carrot and broccoli.
  3. Pour broth over vegetables and increase the heat to high.
  4. Bring to a boil, reduce heat to medium and simmer for 5 minutes.
  5. Using an immersion blender, puree until smooth.
  6. Return the soup to the pot.
  7. Add milk, Gorgonzola Cheese and simmer 1 minute to heat through.
  8. Whisk together. Season to taste with salt and pepper.
