Goat Cheese Stuffed Potato Skins

Ingredients

  • 3.5 ounce (about 1 cup) Treasure Cave® Crumbled Goat Cheese 
  • 1 tablespoon mayonnaise 
  • 1/2 teaspoon BBQ seasoning 
  • 4 strips bacon, chopped 
  • 4 potatoes 
  • 2 tablespoons butter, cut into 8 pieces 
  • 1 green onion, sliced 

Directions

  1. Preheat the broiler. 
  2. In a small bowl, combine the Treasure Cave® Crumbled Goat Cheese, mayonnaise and BBQ seasoning and set the mixture aside. 
  3. Cook the bacon until crisp, drain and set aside. 
  4. Using a fork, prick the potatoes all over. Microwave them until they’re soft, 5–7 minutes. Cut them in half and scoop out the centers, leaving about a ½ inch of potato flesh in each half. Place one piece of butter into each potato skin half. Then, place them on a broiler pan and broil for 2 minutes. Brush the melted butter over all of the flesh and broil for 2 more minutes.  
  5. Carefully remove the pan from the oven and spread each potato with the Treasure Cave® Crumbled Goat Cheese mixture. Sprinkle with the bacon, return them to the oven and broil them for 2 more minutes.  
  6. Sprinkle the potato skins with the green onions and serve.
