Reduced Fat Blue Cheese Watermelon Salad

Ingredients

  • 5 ounces packaged mixed salad greens
  • 1/4 cup fresh mint, leaves removed from stems
  • 8 cups 3/4-inch cubes seedless watermelon
  • 8 cherry tomatoes
  • 8 ounces Treasure Cave® Reduced Fat Blue Cheese
  • 2 Tablespoons store-bought reduced fat balsamic 
  • Vinaigrette
  • Pepper

Directions

  1. Arrange romaine lettuce and fresh mint leaves over large platter.
  2. Scatter watermelon, tomatoes and then Treasure Cave® Reduced Fat Blue Cheese on top.
  3. Drizzle with reduced fat balsamic vinaigrette and season with pepper.
