Reduced Fat Blue Cheese Watermelon Salad
- 5 ounces packaged mixed salad greens
- 1/4 cup fresh mint, leaves removed from stems
- 8 cups 3/4-inch cubes seedless watermelon
- 8 cherry tomatoes
- 8 ounces Treasure Cave® Reduced Fat Blue Cheese
- 2 Tablespoons store-bought reduced fat balsamic
- Arrange romaine lettuce and fresh mint leaves over large platter.
- Scatter watermelon, tomatoes and then Treasure Cave® Reduced Fat Blue Cheese on top.
- Drizzle with reduced fat balsamic vinaigrette and season with pepper.
