Tomato, Feta and Quinoa Salad

Ingredients

  • 3 cups cooked quinoa, cooled
  • 1 cup cherry tomatoes, halved
  • ½ red bell pepper, diced
  • ½ cucumber, seeded and diced
  • ½ cup Treasure Cave® Crumbled Feta Cheese
  • 2 tablespoons fresh chives, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh mint, finely chopped
  • Treasure Cave® Crumbled Feta Cheese for garnish

 

For the dressing:

  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon dried oregano
  • 3/4 teaspoon dried basil
  • 1/2 teaspoon pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Dijon-style mustard
  • 1/3 cup plus 1 tablespoon red wine
  • Vinegar
  • 1/4 cup plus 2 teaspoons extra virgin olive oil

Directions

  1. To make the dressing: Whisk together the dressing ingredients except for the olive oil until combined. Gradually whisk in oil until well blended.
  2. In a large bowl, toss together all of the non-dressing ingredients until combined. Drizzle with the dressing and toss gently to coat. Garnish with crumbled feta cheese. Serve chilled or at room temperature.
