Summer Spanakopita Dip


4 ounces (1 cup) Treasure Cave® Crumbled Feta Cheese, divided

2 tablespoons olive oil

1/2 cup diced onion

2 cloves garlic, minced

5 ounces fresh baby spinach, rinsed and chopped

1 cup Greek yogurt

1 tablespoon chopped fresh dill

Salt and pepper to taste

1 1.9-ounce pkg. filo cups, broken into halves, or tortilla chips


Remove 1 tablespoon Treasure Cave® Feta Cheese; set aside.

Heat olive oil in a medium skillet over medium-high heat. Add onion and garlic, and sauté, stirring frequently until beginning to brown 5 to 7 minutes. Add spinach and sauté while stirring until spinach is wilted, 2 to 3 minutes. Remove from heat and stir in yogurt, Treasure Cave® Feta, and dill. Season with salt and pepper. Refrigerate until ready to serve. Place in serving bowl and sprinkle with reserved tablespoon of Treasure Cave® Feta Cheese.
