Crockpot Buffalo Chicken Dip with Original Blue Cheese Dip & Spread

By: Brooke Carson / @brooklynsbites

Ingredients

  • 2½ cups rotisserie or canned chicken
  • ⅔ cup buffalo sauce
  • 1 cup shredded cheddar cheese
  • 4 ounces cream cheese, cubed
  • ½ cup sour cream
  • ½ cup ranch dressing
  • 3/4 cup Treasure Cave Original Blue Cheese Dip & Spread
  • 2-3 green onions, diced
  • 1/2 teaspoon salt - plus more to taste
  • 1 teaspoon black pepper
  • Tortilla chips, celery and carrots to serve
  • Green onions and Treasure Cave Blue Cheese Crumbles for garnish (optional)

Directions

  1. Add the base ingredients to a slow cooker: cooked chicken, buffalo sauce, shredded cheddar, cream cheese, sour cream, ranch dressing, black pepper, diced green onions. Mix until well combined, then cook on low for 3½–4 hours or high for 1½–2 hours.
  2. Fold in the Treasure Cave Original Blue Cheese Dip & Spread (¾ cup) during the last 20–30 minutes of cooking. Stir it in gently so it melts smoothly and distributes evenly rather than clumping.

  3. Once done, mix well to ensure all the cheese has melted and the dip is smooth. Check the consistency: if it's too thick to scoop cleanly, loosen with a splash of milk, ranch, or sour cream - a tablespoon at a time - until it's dippable. Taste and add salt only if needed.

  4. Garnish with Treasure Cave Blue Cheese Crumbles and extra green onions.

  5. Serve with tortilla chips, celery and carrots.
